Gut-Healing Chicken Bone Broth

Gut-Healing Chicken Bone Broth

Ingredients

  • 1 organic whole chicken carcass
  • 2 carrots, roughly chopped
  • 2 celery stalks, chopped
  • 1 onion, quartered (skin on for trace minerals)
  • 4 garlic cloves, lightly crushed
  • 2 tbsp apple cider vinegar (to help extract minerals from bones)
  • 1 small bunch parsley (added at the end)
  • 1 tsp salt
  • 2.5 litres filtered water

Method

  1. Add the chicken carcass, vegetables, garlic, vinegar and salt to a large stock pot or slow cooker.
  2. Cover with filtered water and bring to a gentle boil.
  3. Reduce to a very low simmer and cook uncovered for 12–24 hours on the hob (or 6–8 hours in a pressure cooker).
  4. Add the parsley during the final 30 minutes of cooking.
  5. Strain the broth through a fine mesh sieve and pour into sterilised glass jars.
  6. Store in the fridge for up to 5 days or freeze for longer shelf life.
