Grass-Fed Beef, Root Vegetable & Thyme Stew

Ingredients

  • 400g grass-fed beef chuck, cubed
  • 2 carrots, chopped
  • 1 parsnip, chopped
  • 1 celery stick, sliced
  • 1 small leek, sliced
  • 2 tbsp tomato purée
  • 500ml filtered beef stock or bone broth
  • 1 tbsp avocado oil or ghee
  • 2 sprigs fresh thyme
  • Salt & pepper

Method

  1. Heat oil in a pan and brown beef lightly for flavour.
  2. Transfer to slow cooker with vegetables, seasoning and thyme.
  3. Stir in tomato purée and stock.
  4. Cook on low for 6–8 hours.
  5. Serve.
