Grilled Mackerel With Avocado & Tomato Salsa

Ingredients

  • 2 mackerel fillets (skin on)
  • 1 ripe avocado, diced
  • 10 cherry tomatoes, quartered
  • 1 small red onion, finely chopped
  • Juice of 1 lime
  • Fresh coriander, chopped
  • Salt and pepper

Method

  1. Preheat grill. Season mackerel with salt and pepper.
  2. Grill skin side down for 5 minutes, then 3 minutes skin side up.
  3. Mix avocado, tomatoes, onion, lime juice, coriander, salt, and pepper to make the salsa.
  4. Serve mackerel topped with salsa.
